We at the Roebuck are on a mission to have a fresh start after the pandemic. We have spent the time during the closures creating the largest garden in Winchester seating 150 people and perfecting our outside kitchen ready for the opening! We want to have a reputation for wonderful but simple quintessentially British pub food. The Roebuck is the flagship of an ever-growing pub group.
About the role
As a Sous Chef, your primary role will be to assist the Head Chef running both the inside and outside kitchens. You will be covering the Head Chef’s days off and the outside kitchen is visible to guests so the presentation of both you and the food is key. You will be working with a small team to prepare, cook and present the food in a sustainable and consistent way.
Both you and the head chef will be in charge of the team around you, so a firm understanding of the cleanliness that is required is essential and the ability to build constructive relationships within the team. We are looking to build a new harmonious team throughout the pub so you will communicate clearly, professionally and concisely with all staff to pursue the team goals of great services.

You’ll be a part of a small team of hardworking people, some with vast amounts of knowledge of the industry, others with natural customer service abilities while some are fresh into the industry.
Your job is to be a valued and reliable part of this team, to hold the team together and help lead. You will need to inspire them to be enthusiastic about the food and help them expand their knowledge of food and customer service.
About you
- Passionate about simple food done beautifully.
- Good knowledge of classic cooking techniques but the head chef will help you with anything.
- Willingness to learn all sections of the kitchen and therefore support all members of the kitchen staff.
- Reliable, great time management and both presentation of food and yourself.
- Trained in all basic paperwork needs such as HACCP, COSHH and fridge temperature timesheets.

We want to have a team that is lead by a strong manager whom inspires harmony and fun throughout. The Roebuck is the flagship of an ever-growing pub group.
ABOUT THE ROLE
You will help to lead and inspire the team, nurturing passion and daily life skills with them. You will be supporting the General Manager and running the show on his days off. You will need to work alongside the kitchen to come up with menus that you all agree will sell and be up to the standard which we uphold. You’ll be responsible for ensuring stock is used, rotated and sold with enthusiasm. Your absolute priority will be customer service, your standards will be incredibly high, so making sure each and every customer has the potential to become a regular. Lastly, you will need to have a firm understanding of the COVID safety rules as laid out by the government and how they can be applied at the Roebuck.

You will need to inspire them to expand the knowledge of products and their pairings.
ABOUT YOU
A minimum of 3 years of hospitality/bar management experience is essential.
In-depth knowledge of ordering, stock controls and maintaining industry standards of cleanliness. Passion for customer service and enthusiasm for great products delivered beautifully. We hope to form a structured and dependable day to day working life but they will be occasions when you will need to be flexible and adaptable. A firm understanding of the products, the origins and their importance of them to the Roebuck.

Salary: £24,000.00-£26,000.00 per year depending upon experience
